Wai Mun’s research interests lie in functional foods and their cardiovascular protective mechanisms. In 2013 he set up the centre for Functional Food & Human Nutrition at Nanyang Polytechnic in Singapore, and has since worked with the food industry in the design, development and validation of functional food. He also lectures on food chemistry and human nutrition at the Nanyang Polytechnic and is an adjunct lecturer at the University of Newcastle in the UK. In 2017 he founded Innovprof to continue his work in the functional food domain. He has a PhD in chemistry and pharmacology from the University of Western Australia and undertook post-doctoral training at the National University of Singapore.
